Lechon Kawali

My friend Francine is craving for Lechon after seeing the pictures of yummy foods that I posted the other day. -_^ I can understand the feeling of craving foods because we are from the same country Philippines and now living in another country with our loving husband of course. I don't have the recipe for the lechon in the oven but got the lechon kawali as substitute for your lechon craving. So my dear Francine, here's your request... now granted! haha

Ingredients

1 1/2 lbs pork liempo (pork belly)
3 garlic clove, crushed
2 laurel leaf (bay leaves)
1 teaspoon peppercorn or 1/2 teaspoon black pepper
salt
water, for boiling
oil (for frying)

SAUCE

3 tablespoons soy sauce
5 tablespoons vinegar
1 shallot or 1 small onion, minced
1 garlic clove, minced
chili pepper (optional)

Directions

1. Cut the pork belly into serving pieces then combine with the garlic, peppercorn, laurel leaves, salt and water in a pan.
2. Bring to a boil and simmer for 35-45 minutes or until skin is tender.
3. Drain, cool and air dry.
4. Deep-fry liempo pieces in batches until golden brown and blisters appear on skin.
5. Mix all the sauce ingredients.

Enjoy cooking and eating! :)
